Olive Olive Bread, Have your bread and enjoy it!

 I always make the list of a thing that I want to bake, I know it sound weird, haha, but if I don't do it my head always run wild ^^, just can't concentrate at all.

 And this week I share my list with my fan page on my face book page, look like many people want to bake the same things as me.
Olive bread is on my list too, actually I make the Foccacia before, but this time I want it to be more pronounce with a flavor of dark olive. Finally want I do is adding the chopped olive into the dough too ^^, so with each bite you will taste the delicious saltiness of it. But only the chopped olive in the dough won't be enough, so the top of the bread is a lot of thickly sliced dark olive and to deepen the taste flake sea salt and more olive oil is added.
If you find your dough is a bit soft don't add more flour, it will be great to let it be like that, and your bread will have a good and lovely air pocket.
Ps. If you have a problem with salt (with your health or your taste), just skip it, the dough will be delicious for the olive and olive oil, don't worry.



Olive olive bread
Make 1 (25x25cm)


300g ..................... Bread flour
5g .......................... Instant yeast
5g .......................... Sugar
5g .......................... Salt
2tsp ....................... Honey
200g ..................... Water
10g ........................ Olive oil
1/4cup .................. Chopped pitted dark olive
............................... Olive oil for brushing the pan and sprinkle over the bread
................................ Pitted dark olive (thickly slice), for topping
................................ Maldon sea salt (or flake sea salt) for sprinkle on top





 Mix olive oil, honey and water together, put flour, sugar, instant yeast and salt in the bowl, whisk to combine. Use large spoon (or pastry scraper) to mix everything together, and knead briefly to bring all the ingredients together.Take the dough out of the bowl and knead if the dough is a bit dry sprinkle with 1-2 tbsp water, you will see the dough will be elastic. Add the chopped pitted dark olive and knead to distribute it.



Place dough in oiled bowl and turn to coat with oil. Cover with a damp cloth and put in a warm place free of drafts for 1 to 1 ½ hours. Dough should be doubled in bulk.
When the dough is ready.
 Line 25x25 cm pan with baking paper (or heavily oil it with olive oil).
 Take the dough out of the bowl, then press the dough into the prepared pan, let the dough rest for 10-15 minutes then press it until the dough cover the pan completely. 


Preheat oven to 200°C.
Let the dough rise for about 30 minutes in a warm place.
About 10 minutes before baking, press sliced olives, sprinkle the sea salt evenly over the dough and drizzle olive oil over dough.
Bake for 25-30 minutes until golden brown.
Remove from baking sheet, and cool on a wire rack (if you can resist it, hehe).
