Vegan Bread (no Yeast)

 In Thailand, we have a "Kin Je festival" (eating vegetarian food) in October,  actually I don't participate in this festival but many of my friend do.


Kin Je, is not only about not eating meat, but many people don't eat dairy product, or yeast too, so it's not easy for them to eat bread ^^. So, I developed this recipe, for people who want to eat bread without using yeast or dairy and it's very easy to do too.
You can use any kind of nut milk (soy or almond) or if you don't want to use any of them water is fine. Add enough water and knead until you get smooth dough, because the base is cake flour it won't become hard. 
After baking, don't forget to cover the bread with tea towel until cool, it will make the bread crust become soft and I think you will be happy with it.



Vegan Bread (no Yeast)
Makes 2 small breads


200g ......................... Cake flour
1 1/2 tsp ..................... Baking powder
1 1/2 tbsp ................... Granulated sugar*
1/4tsp ......................... Salt
45ml ........................... Rice bran oil
110-120 ml ................. Soy milk (Nut milk or water ^^)

* you can use honey instead of sugar








  Preheat an oven to 200C
Line a baking sheet with baking paper or Silpat.



Put flour, sugar, salt and baking powder into a bowl, and whisk to combine.

I use Rice Bran oil

 Make a well in the centre and pour soy milk (or water) and rice bran oil into the bowl.

 Mix until combine.
 Knead with your hand until smooth.


 Cut into 2 pieces.


 Roll each piece into a ball.


 Place on the prepared baking sheet, flatten it slightly. 
Cut an X over each bread.



Bake for 18-20 minutes or until golden brown.
Remove from the oven and cover with clean tea towel until cool.
