Vegan chocolate banana cupcakes

 After posted vegan bread, I received a lot of mail ^^, most of them are requests for more vegan recipes. Many people are allergic to dairy product and egg, so vegan bake good can be their answer.

 I think that I'm so lucky that I don't have that problem, but I really want to help. So this recipe is another choice for you (yes, whoever you are, you can enjoy bake good without fear). This cupcake is very easy to make, all you have to do is put all the ingredients in the food processor (or blender) and process until smooth. 
The sweetness of the cake depends on the sweetness of the banana too, if it's very ripe and sweet, you can use less sugar, if not use more of it will make cake sweet enough and stay moist. I added vanilla bean to give the cake more fragrance, but it's your choice, just do it the way you want.
I will try to find good vegan recipes, and I hope that I can make you happier ^^, anyway I will chose the one that doesn't need any special ingredients so you make it easily without having to buy a lot of things.



 Vegan chocolate banana cupcakes
Makes 8 cupcakes


200g ......................... Banana, ripe
140g ........................... All purpose flour
50-60g ....................... Brown sugar, depend on how sweet your banana is
1/4 tsp ........................ Salt
1 1/2tsp ....................... Baking powder
15g .............................. Cocoa powder
50g .............................. Rice bran shortening (non-hydrogenated rice barn oil shortening)
100g ............................ Soy milk, or other kinds of nut milk
..................................... Banana for decorating
.................................... Vanilla bean for sprinkle over the cake, optional 





Preheat an oven to 180C
Line 8 cupcake tins with paper cups.


 I use this Shortening  (non-hydrogenated rice barn oil shortening).


 Put flour, baking powder, salt, brown sugar and cocoa powder into the bowl of food processor (or blender).
Process to combine.


 Add the shortening, and process to combine.


  Add the banana, and process to combine.


 Pour the soy milk (or other kind of milk that you use), into the bowl.


 Process until smooth.


 Divide between the prepared tins.
Place a piece of banana on top of each cup.
Sprinkle with vanilla bean (optional).


Bake for 20 minutes or until the top spring back when touch lightly.
Remove from the tins, and let it cool slightly before serving.

    ขอบคุณสำหรับสูตรเจ สูตรนี้นะคะ จะได้ทำให้คุณแม่ทานช่วงเทศกาลเจนี้ค่ะ
    แต่ดิฉันไม่มี shortening น้ำมันรำข้าว สามารถใช้ crisco แทนในปริมาณเท่ากันได้ใช่มั้ยคะ
