Eggsalut: Poached egg with mashed potato for your happy morning!

 Breakfast is the most exciting meal for me, as I always wake up hungry, haha.
 

I don't want to eat a lot at dinner time, sometime, I just have 1 banana or a cup of milk for dinner. But breakfast is another story, egg, cheese, salad, bacon, or a bowl of rice, you name it I eat it, ^^.
I believe breakfast is very important meal, as you need all the energy to keep you happy all day. But many people turn away from breakfast, because they think they don't have enough time to prepare or even eat it!
I know that I can't change other people's way of thinking but if I can I really want to bring good and easy recipes to everyone home, so people will start eating breakfast again.
Today, it's one of very easy and quick menu, that you can prepare ahead. By cooking the potato in the microwave, you can safe a lot of time (in boiling and washing ^^). Steaming the eggsaluts in a shallow pan shorten boiling time too. As I eat a lot in the morning, I prefer 2 eggs, but you can go for one if you want.
You can prepare the mashed potato, put in ramekins, cover with plastic wrap and refrigerate. Then crack the egg over them in the morning and steam them ^^. 

PS. if you don't want to steam them, you can cook it in the microwave too. Prick the egg yolk with toothpick, cover with wrap, and heat in the microwave for 1-1.30 minutes (600W).

Eggsalut
Serves 2


180-200g ..................... Potato
..................................... Pinch of salt
1 tsp ............................ Parmesan cheese, grated (optional)
4-6tbsp ........................ Whipping cream or milk
2-4 ............................... Eggs
..................................... Salt, pepper and dried thyme or parsley
...................................... Toasts, for serving




Warp the potato with the plastic warp, and heat in a microwave at 600w, cook for 4-6 minutes.
If you don't want to use microwave, peel the potatoes and cut into pieces, then boil it until fully cook. 


Peel, and cut into pieces, sprinkle with salt, and Parmesan cheese.
Pour the whipping cream or milk into the bowl.


 Mash them together.


Put in 2 ramekins (I use Le Creuset 0.2L).


 Crack in the eggs. 


Cover with a lid, and steam for 8-12 minutes.


Until the eggs half cooked.
Sprinkle with salt, pepper and dried herb.
Serve with toasts, and enjoy!
